Tasting notes:
A balance between sweet and savoury fruit and structure. A fined boned and fragrant expression with bright, ripe cherry fruit flavour and gentle tannin.

“Fun wine this. Scents of kirsch and maraschino cherry. Strong. Sweet-sour to taste, refreshing, bright and lightly juicy with sheets of fine, taut tannins lending shape. Has this kind of nouveau sangio feel to it, and likewise suggests it should be drunk cold, or could be. Perky, vivacious, lighter red“
MAKER’S NOTES
Handpicked fruit from our vineyard at Axedale, destemmed and fermented with wild yeast in open pots over 2 weeks, with daily pump overs early and hand plunging as ferment slowed. Pressed and settled in tank and racked to barrel where the wine rested on fine lees over winter in seasoned oak casks, racked in early summer, post malolactic fermentation bottled with a small sulphur addition.
