Handpicked Viogner grown by Farmer Smith in an elevated sedimentary site at the southern end of the Heathcote GI, close to the town of Redesdale. The Viogner block is east-facing on the low side of the hill and catches plenty of morning sun, with shade through the afternoon yielding ripe fruit with plenty of natural acidity.
In the cellar the fruit was whole bunched pressed and fermented in stainless steel over two weeks before being racked off gross lees and moved to barrel with fine lees over winter. Racked in mid-winter with a small amount of sulphur and bottled under stelvin with no filtering.
